Hope this is not a stupid question, but what are the benefits of soft over medium (or the other way round). I am looking to change my tip but am unsure as to which will suit me. Any ideas?

not really a benefit as such, more finding a tip that feels ok for you. what tip do you have just now?
I currently use a blue diamond tip, I have tried elk(master?) In the past but found them very hard in comparison.
elkmasters vary a lot depending on which you select from the box.
Personally I've always found Blue Diamonds harder than Elk Master when played in and at a similar height, Blue Diamonds can feel softer at first because of the extra height
You will be lucky to find 1 good elk in a box of 10 its like having one of those snow ball cakes on the end of a cue, they also tare to much when shaping.

Are elks really that inconsistent in terms of quality?
