You need to form a barrier between the outside world and inside, it is not easy, ventilation of garage is key, and there must be an air gap between the insulation and the roof, without this it will not be as effective. Ideally the roof insulation should be tied into wall insulation, but now it starts getting expensive. The condensation is formed by moisture in the air in the room gathering on the metal, so again ventilation can help in removing moisture from the room.
Like i said this is not easy and can get very expensive, getting it wrong can also cause other problems like damp and mould. Have a look on some of the DIY forums, i am sure this has been covered on those numerous times.

Have a chest freezer in there at the moment, would this make a big difference?
Am thinking of just rigging internal guttering to catch the drips over my table, to cold to be messing about in there at the mo any way, especially when theres a sauna like working mens club 4 minutes walk away! LolNo one is listening until you make a mistake!

I fitted kingspan to my workshop just takes a bit to heat up!
I have 3 electric heaters on a timer which comes on in the morning so its cosey to work in.
I wouldn't say it's a perfect environment tho because I can't leave heaters on all the time.
Have to turn it off when I'm done, then get freezing again.
No good for exotics, ebony, shafts or that.
So store mine in the house which ain't perfect.
Overall I'd say the insulation helps tho and makes it workable.
