Undercut means "to trim the underside of the protruding NOSE of the rubber cushion". It is done where the cushion starts to curve until it ends into a pocket. Actually the rubber is filed or sanded instead of cutting in reality.

If you still have the drawing could you please email a copy to me at billlee05@hotmail.com. We are going to recover our club table and I would like to try to fix up the pockets. If I measure across the corner pockets they are around 3 1/4" , perhaps a bit less. I think that a club table should be 3 3/8"

the 3.25" sounds correct if this is the gap between the parallel sides of the corner pocket.
the distance across the pocket opening tangentially at the start of the drop is 3.313, i.e. taking into account the widening of the pocket cushions.
the radius of the drop is 3.5"

For club tables it's usually that the pockets are a little wider than what you see on TV. I've found the old B&SCC templates are the best but the WPBSA templates are actually alright too if they are done correctly.
