Watching the pros noticed there is a big difference in tip height it can range from a very meaty tip height with a very pronounced burnished side wall to a almost wafer thin tip sort of blending in with no side wall is this just a matter of choice or are there any advantages or disadvantages with different tip heights.

I did hear once that someone buys flat tips rather than domed and cuts them in half so they get 2 tips for the price of one and they're at the perfect height!

I have done that plenty of times, especially with a very small tip, it just looks so strange when the tip is really chunky

The ADR's are a big tip as well, out of all the tips I have seen that's about the only one that you could easily cut in half and have a tip plenty big enough.
I believe that with a chunky tip my timing just is all wrong, I guess I'm hitting the ball a couple of mm before I would with a thinner tip, which I usually do use. Might be a load of rubbish but I definitely don't play as good with a chunky tip
